The pasta sauces are made from fresh, local ingredients — you can taste it in every mouthful. No heavy, greasy sauces. No excessive salt. Every flavour is balanced and harmonious.
Two dishes I particularly recommend:
Pasta with courgette and vongole — light, delicate and aromatic. A perfect combination of sea and garden.
Pasta alla Norma — pasta with aubergine, tomatoes and ricotta salata cheese. A Sicilian classic at its very best. Quite possibly the finest Pasta alla Norma I have ever eaten.
